is a certified company specialized in producing and selling olive oil and a few other Mediterranean products,  namely: pickled olives, sun dried tomatoes, chili powder and crushed paprika.

Byrsa Golden Extra virgin olive oil is our pride. Our company sells two olive oil varieties. Both varieties come from the authentic Tunisian olive varieties: Chetwi and Chemlali.

Byrsa Golden  Chetwi has a strong olive oil taste which is ideal for dipping, dressing salads, and giving a final chef-like touch to your dishes.

Byrsa Golden Chemlali has a sweet and tender fruity oil that is less intense and thus ideal for seasoning pasta, sauces, and flavouring both sweet and savoury recipes.

Hajri Mediterranean Flavors Export manages the entire olive oil production cycle: From growing trees in organic areas to pressing and bottling olive oil.

The main process of producing extra virgin oil is based on the Hajri family’s expertise that has been carefully passed down from generation-to-generation. Around 20% of the company’s olive oil is sourced from the owner’s olive orchards, which are located in a well-known Amazigh (Berber) village formerly known as Aradin, and today called Sidi Jdidi. . The remaining percentage is collected from small local farmers making up nearly 1 million olive trees.

All our ripe olives are picked by hand. The harvest starts in October and continues on to mid-February, depending on how ripe the olives are. All the harvested olives are carefully sorted, washed with water, and pressed on the same day of collection.

Oil extraction is always done by exclusively cold mechanical action with a strong consideration to the temperature control guidelines to obtain the cold pressed extra virgin olive oil with its authentic taste...

Our company has the capacity to produce about 500 tons of extra virgin olive oil and bottle more than 700 tons of olive oil per year. It also produces a ‘light’ olive oil which is a healthier alternative to other vegetable oils and can be used for either cooking or pickling/preserving.

The olive groves grow in ideal conditions set among peninsula hills which is why many of our products have received awards and international prizes for its genuine and authentic taste full of fresh fruity flavors. Each olive tree is strategically planted to maximum exposure to the sun all year. That ensures our olives begin ripening from early October to the last days of February. During that period of ripening, our olives are manually harvested and carefully pressed the same days to preserve its freshness, thereby guaranteeing a quality oil.

Thanks to the favorable locations of the olive groves set on peninsula hills, our products have many awards and international prizes for its genuine authentic mild taste full of fresh fruity flavors. Each olive tree is wisely planted to be exposed to the sun all over the year. That makes olives ripen from early October to the last days of February, during this period of time all our olives are manually harvested and carefully pressed the same day to preserve its freshness and guarantee our quality to give chefs’ highly recommended taste to your cuisines.

Hydroxytyrosol and Oleocanthal are polyphenols that are in abundance in olive oil. Hydroxytyrosol and Oleocanthal have antioxidant, anti-inflammatory, cancer-fighting, neuroprotective, and antimicrobial properties.

During the olive harvest, women proudly wear the malia, a traditional Tunisian garment made from thick wool. This elegant attire, often adorned with colorful patterns or embroidery, symbolizes rural identity and cultural heritage. It protects from the morning chill while allowing for great freedom of movement. The malia represents the beauty and strength of Tunisian women at work. As everyone works, traditional Tunisian songs, such as "Al Arroubi", fill the air, adding joy and a sense of community, making the work more enjoyable and strengthening the bond between generations.
